Although from time to time I have posted recipes on the blog, cooking is not a favorite pastime.
But I’m having a tea party and every time I open the freezer I see bags of frozen strawberries that Charlie packaged last spring/summer at the height of strawberry season.
So to go along with my lemon curd-filled meringues (Pavlovas) I decided to make some strawberry coulis. A “coulis” is simply a thick sauce or thin puree made from fruits or vegetables.
The recipe from Epicurious.com is very simple: frozen strawberries, sugar, lemon juice.
The directions say to bring all the ingredients to a boil on top of the stove;
then puree in a blender
Beautifully fresh and delicious tasting and looking.
I’ll refrigerate the coulis until I’m ready to assemble the Pavlovas.
